About

Vintner is a fully local home-winemaking calculator and reference toolkit. brix_to_abv_calculator computes potential/actual alcohol from the change in Brix across fermentation using the verified, widely-published (starting Brix - final Brix) x 0.55 formula. sulfite_dosing_calculator computes grams of potassium metabisulfite needed for a target free-SO2 increase and gives pH-aware guidance on what free-SO2 level is actually protective. chaptalization_calculator computes the sugar addition needed to raise must to a target Brix using the standard ~10 g/L-per-Brix-point rule of thumb, verified against a published worked example. fermentation_temp_guide covers typical temperature ranges for red, white and sparkling-base wine. grape_variety_guide covers ten common varieties from a winemaking lens - typical harvest Brix/acid/pH and fermentation considerations (Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay, Sauvignon Blanc, Riesling, Zinfandel, Syrah, Malbec, Grenache). troubleshooting_guide covers stuck fermentation, hydrogen-sulfide/rotten-egg and vinegar/acetic off flavors, cloudy wine, and excessive foam. equipment_glossary defines ~12 common terms (must, racking, lees, airlock, hydrometer, malolactic fermentation, SO2, must weight, carboy/demijohn, punch-down, wine thief, Campden tablet). racking_schedule_guide gives a general racking timeline from first racking through bottling. aging_guide gives typical bulk- and bottle-aging ranges for red, white, rose and sparkling wine. Keyless; fully local; zero upstream calls; informational only, not a substitute for professional winemaking guidance; home-winemaking laws and limits vary by jurisdiction; meant for adults of legal drinking age.

Sources: Calculators: published, cited home-winemaking formulas (Brix-to-ABV, chaptalization, potassium-metabisulfite SO2 dosing) computed locally; reference guides: in-house editorial reference informed by widely-documented home-winemaking practice; fully local, zero upstream calls

What Vintner is for

The math and reference questions that come up when making wine at home — what's my potential alcohol from this Brix reading, how much sugar do I need to hit a target Brix, how much potassium metabisulfite to dose a batch, what temperature should this be fermenting at, when do I rack, why does this smell like rotten eggs — answered from one fully local toolkit, without hunting down a formula, a forum thread, or a spreadsheet. It's the making side of home wine, not the drinking side: for tasting notes, food pairing, or a consumer wine/spirits reference, see Cellar — Vintner is entirely about the calculators and process guidance behind the bottle.

What it does

Two verified calculators built on published, cited formulas: brix_to_abv_calculator computes potential/actual alcohol from the change in Brix across fermentation ((starting Brix − final Brix) × 0.55, a widely-published home-winemaking approximation), and chaptalization_calculator computes the grams of sugar needed to raise must to a target Brix (the standard ~10 g/L-per-Brix-point rule of thumb, verified against a published worked example). sulfite_dosing_calculator computes grams of potassium metabisulfite needed for a target free-SO2 increase (KMS is ~57% available SO2 by weight) and — since a wine's pH changes how much free SO2 is actually needed for effective protection — gives pH-aware guidance using the standard sulfurous-acid equilibrium, assuming a typical table-wine pH if none is given. Then six local reference guides: fermentation_temp_guide for typical temperature ranges by wine type (red, white, sparkling base); grape_variety_guide for ten common varieties from a winemaking lens — typical harvest Brix/acid/pH and fermentation considerations, not tasting notes; troubleshooting_guide for common problems (stuck fermentation, hydrogen-sulfide/rotten-egg or vinegar/acetic off flavors, cloudy wine that won't clear, excessive foam) with likely cause and a general fix approach; equipment_glossary for ~12 common terms (must, racking, lees, airlock, hydrometer, malolactic fermentation, SO2, must weight, carboy/demijohn, punch-down, wine thief, Campden tablet); racking_schedule_guide for a general racking timeline from first racking through bottling; and aging_guide for typical bulk-aging and bottle-aging ranges by wine type.

What it is not

Not a substitute for professional winemaking guidance, a lab, or your own hydrometer and pH meter — every calculator here uses a published approximation, clearly cited, and real results depend on your specific must, yeast and equipment; confirm anything that matters (final alcohol for labeling, SO2 levels for a batch you're counting on) with your own measurement. Home-winemaking legality, production limits (many places cap how much wine a household may make tax-free per year) and age requirements vary by jurisdiction — check your own local law, which this Service does not know or verify. Vintner is purely informational: it doesn't sell, recommend, or encourage the consumption of alcohol, and it's meant for adults of legal drinking age in their own jurisdiction, making and enjoying wine responsibly and legally.

Tools

Calculators

brix_to_abv_calculator — Potential/actual alcohol by volume from the change in Brix across fermentation, using the verified, widely-published (starting Brix - final Brix) x 0.55 home-winemaking approximation. Use for "what's my potential alcohol from 24 Brix", "ABV from 25 Brix down to 0". Args: starting_brix, final_brix.

sulfite_dosing_calculator — Grams of potassium metabisulfite (KMS) needed to raise free SO2 by a target ppm in a given volume, plus pH-aware guidance on what free-SO2 level is actually protective (since a higher-pH wine needs more free SO2 for the same antimicrobial effect). Use for "how much KMS for 20 liters to add 30 ppm SO2 at pH 3.4". Args: volume_liters, target_ppm_so2, wine_ph.

chaptalization_calculator — Grams of sugar needed to raise must from a current to a target Brix in a given volume, using the standard ~10 g/L-per-Brix-point home-winemaking rule of thumb. Use for "how much sugar to raise 20 liters from 19 to 23 Brix". Args: current_brix, target_brix, volume_liters.

Fermentation & grapes

fermentation_temp_guide — Typical fermentation temperature ranges (°F and °C) for red, white, or sparkling-base wine, with the reasoning behind each range. Use for "what temperature should I ferment a red at", "is 55°F too cold for a white wine fermentation". Args: wine_type.

grape_variety_guide — A grape variety's typical harvest Brix/acid/pH ranges and fermentation considerations, from a winemaking (not tasting) lens -- ten common varieties: Cabernet Sauvignon, Merlot, Pinot Noir, Chardonnay, Sauvignon Blanc, Riesling, Zinfandel, Syrah, Malbec, Grenache. Use for "what Brix should I pick Zinfandel at", "fermentation considerations for Syrah". Args: name.

Troubleshooting & equipment

troubleshooting_guide — Likely cause and a general fix approach for common home-winemaking problems: stuck fermentation, an off flavor (hydrogen-sulfide/rotten-egg or vinegar/acetic smell), cloudy wine that won't clear, or excessive fermentation foam. Use for "my wine smells like rotten eggs", "fermentation seems stuck", "my wine won't clear". Args: issue.

equipment_glossary — Definitions of ~12 common home-winemaking equipment and process terms (must, racking, lees, airlock, hydrometer, malolactic fermentation, SO2, must weight, carboy/demijohn, punch-down, wine thief, Campden tablet). Use for "what does 'racking' mean", "what's a Campden tablet". Args: term.

Cellar practice

racking_schedule_guide — A general home-winemaking racking timeline (a widely-used '1-3-3'-style rule of thumb) from the first racking off gross lees through bottling. Use for "when should I rack my wine", "how often should I rack".

aging_guide — Typical bulk-aging and bottle-aging ranges for red, white, rosé, or sparkling wine -- general guidance, not a guarantee. Use for "how long should I bulk age a red", "when is a white ready to drink". Args: wine_type.

Conventions

  • Read-only. Every tool reads public data or computes; nothing is written anywhere and nothing about the user is stored.
  • Result envelope. ok: true with data, or ok: false with a structured error (bad_input, not_found, upstream_error). degraded lists optional sources that were unreachable.
  • Rate limits. Free tier 60 tool calls/minute and 300/day per user (keyed on the user identifier supplied by the host agent, else client IP); Pro keys raise this. Over-limit calls return HTTP 429 with Retry-After. initialize and tools/list are never counted.

Privacy policy

Vintner — Privacy Policy

Effective 24 September 2026. Unify Dynamics LLC ("we", "us"), Menlo Park, California.

What Vintner is. Vintner is a connector (an MCP server and REST API) that AI assistants and personal agents call on your behalf for a fully local home-winemaking calculator and reference toolkit: potential-alcohol and chaptalization (sugar-addition) calculators, a sulfite dosing calculator, fermentation temperature guidance, a grape variety guide, a troubleshooting guide, an equipment glossary, a racking schedule guide, and aging guidance. You interact with your assistant; the assistant sends us only the arguments needed for that one lookup or calculation.

What we receive. The arguments of each tool call — Brix readings, a target SO2 level and optionally a wine pH, a current and target Brix and a batch volume, a wine type, a grape variety name, a troubleshooting topic, or a glossary term — the technical headers needed to serve the request (an IP address or a client identifier supplied by the assistant, and a Pro API key if you have one), and standard server logs.

Everything is computed or answered from bundled, hand-curated reference files, and nothing is stored. No request is forwarded to any third party — there is no upstream call at all, live or otherwise — and no query is logged in request bodies, recorded, or used to train anything.

What we do not receive or store. We do not receive your conversation with the assistant or your name, and we do not build a profile from your queries: each request is answered independently and nothing carries over between requests. We do not ask, infer, or store anything about your age, your batch size or production volume over time, or your location for the purposes of local home-winemaking law. Rate-limit counters (a client identifier and timestamps) are held in memory for at most 24 hours. Hosting-provider access logs, which contain IP addresses and request paths but not request bodies, are retained for up to 30 days for security and abuse prevention.

Sub-processors. None — the entire dataset is bundled with the server and every calculation runs locally. Hosting: Vercel (United States regions).

Legal bases and your rights. Our processing is necessary to provide the service you request through your assistant. Because we store no personal data beyond short-lived logs, requests to access, correct or delete personal data are usually satisfied automatically; you can still contact agent@connectorbay.com and we will respond within 30 days. We do not sell or share personal information and do not use your data to train models.

Children and responsible use. Vintner is a general-audience calculator and reference tool, not designed or intended to encourage alcohol production or consumption by anyone. It is meant for adults of legal drinking age in their own jurisdiction, making wine in compliance with their own local law on home production; we do not verify age or jurisdiction and rely on the operator of the AI assistant and the person using it to use the Service responsibly and lawfully.

Changes. We will post changes here with a new effective date.

Terms of service

Vintner — Terms of Service

Effective 24 September 2026. These terms govern use of the Vintner connector ("the Service") operated by Unify Dynamics LLC ("we", "us").

  1. The Service. Vintner computes home-winemaking calculations (potential alcohol from Brix, chaptalization sugar additions, sulfite/SO2 dosing) and returns reference guidance (fermentation temperatures, a grape variety guide, troubleshooting, an equipment glossary, a racking schedule, and aging guidance) from bundled, hand-curated content and published formulas. It is accessed through an AI assistant or directly over MCP or HTTP.
  2. Informational only — not professional winemaking guidance. Vintner's calculators use published, cited approximations (see the connector documentation for each formula and its source) computed against the numbers you provide; they are estimates, not guarantees, and real results depend on your specific must, yeast, equipment and technique. Nothing in the Service is a substitute for professional winemaking guidance, a lab analysis, or your own hydrometer, refractometer or pH meter — verify anything that matters (final alcohol for labeling purposes, SO2 levels you're relying on) independently.
  3. Legal drinking age and local law. The Service is intended for adults who are of legal drinking age in their own jurisdiction, making wine for personal use in compliance with local law. Home-winemaking legality, production-volume limits, and licensing requirements vary widely by jurisdiction and change over time — this Service does not know, verify, or advise on your local rules, and you are responsible for checking and following them. We do not verify age or identity and rely on the AI assistant's operator and the person using it to ensure appropriate, lawful use.
  4. Reference content, not exhaustive. The grape variety, troubleshooting, equipment, racking and aging entries reflect commonly documented, general home-winemaking practice written in our own words; individual grapes, batches, climates and techniques vary, and real outcomes routinely fall outside these general ranges.
  5. Acceptable use. Automated use within the published rate limits is welcome.
  6. Availability. The Service is provided "as is" without warranty. We may change, limit or discontinue it at any time.
  7. Data. Our Privacy Policy describes what we process. In short: your inputs are used to compute or look up an answer from bundled data, and nothing is stored.
  8. Pro keys. Optional Pro API keys are issued at our discretion, are personal to the holder and may be revoked for abuse.
  9. Liability. To the fullest extent permitted by law, Unify Dynamics LLC is not liable for any loss arising from use of or reliance on the Service, including any loss arising from a winemaking calculation or a batch of wine. Our total liability is limited to US $100.
  10. Governing law. California law; venue in San Mateo County, California.
